Chocolate Sauce Cheesecake Recipe
Serving : 8 Servings
Ingredients
For the pie crust;
- 75 gr. cold butter,
- 1/2 cup sugar,
- 1 egg yolk,
- 1 cup flour,
- 1 tbsp cocoa powder,
- 1 pinch salt.
Cheesecake batter;
- 500 g cream cheese,
- 3 eggs + 1 egg white,
- 1 cup sugar,
- 100 ml heavy cream
- 10 g vanilin sugar,
- 1,5 tablespoons starch.
For the glaze;
- 80 g chocolate,
- 100 ml heavy cream.
Preparation
- For crust mix together the butter and sugar in a large bowl,
- Add the egg yolk and mix,
- Now add the flour cocoa powder and salt and mix with your hands to combine everything together into a soft crumbly dough,
- Spread the dough evenly onto a greased 20 cm springform pan and refrigerate for 30 mins,
- Preheat the oven to 180 and bake the pie crust for 25-30 mins, then let it cool,
- For the cheesecake batter, cream together the cream cheese, heavy cream and egg yolks,
- Add sugar and vanilin sugar, mix,
- In a different bowl mix egg whites until stiff peaks,
- Add the egg whites to cheese mixture and stir until combined well,
- Now add the starch and stir until you get a smooth homogenous mixture,
- Pour this mixture onto the crust and even out,
- Pop into a 170 degrees celsius pre-heated oven,
- Place a oven-safe dishes full of water along with the cheesecake, to prevent it from cracking,
- Bake until golden, for approximately 1 hour, turn off the oven and keep it in the oven (turned off) until cools down,
- For the glaze heat heavy cream in a sauce pan and remove from heat when it starts to boil,
- Add chopped chocolate and stir until melts,
- Set aside until cold, then pour over cheesecake,
- Refrigerate overnight.
