Chocolate Sauce Cheesecake Recipe

Chocolate Sauce Cheesecake Recipe

Ingredients: (for 21 cm springform pan)

For the pie crust;

  • 75 gr. cold butter,
  • 1/2 cup sugar,
  • 1 egg yolk,
  • 1 cup flour,
  • 1 tbsp cocoa powder,
  • 1 pinch salt.

Cheesecake batter;

  • 500 g cream cheese,
  • 3 eggs + 1 egg white,
  • 1 cup sugar,
  • 100 ml heavy cream
  • 10 g vanilin sugar,
  • 1,5 tablespoons starch.

For the glaze;

  • 80 g chocolate,
  • 100 ml heavy cream.

Preparation:

  1. For crust mix together the butter and sugar in a large bowl,
  2. Add the egg yolk and mix,
  3. Now add the flour cocoa powder and salt and mix with your hands to combine everything together into a soft crumbly dough,
  4. Spread the dough evenly onto a greased 20 cm springform pan and refrigerate for 30 mins,
  5. Preheat the oven to 180 and bake the pie crust for 25-30 mins, then let it cool,
  6. For the cheesecake batter, cream together the cream cheese, heavy cream and egg yolks,
  7. Add sugar and vanilin sugar, mix,
  8. In a different bowl mix egg whites until stiff peaks,
  9. Add the egg whites to cheese mixture and stir until combined well,
  10. Now add the starch and stir until you get a smooth homogenous mixture,
  11. Pour this mixture onto the crust and even out,
  12. Pop into a 170 degrees celsius pre-heated oven,
  13. Place a oven-safe dishes full of water along with the cheesecake, to prevent it from cracking,
  14. Bake until golden, for approximately 1 hour, turn off the oven and keep it in the oven (turned off) until cools down,
  15. For the glaze heat heavy cream in a sauce pan and remove from heat when it starts to boil,
  16. Add chopped chocolate and stir until melts,
  17. Set aside until cold, then pour over cheesecake,
  18. Refrigerate overnight.
