Beet Salad Recipe
I created a really healthy and simple salad recipe for you today. I made this salad by embellishing the good old beets with some corn and parsley. And believe it or not; it turned out delicious! I started with raw beets and cooked them myself but you can also use pickled beets to save time and work. If you are using pickled beets then just skip the salt and lemon juice.
Also, as we all know, working with beet can be annoying due to the staining juice that beet naturally contains in abundant amounts. So don't forget to put on an apron when cutting the beet. The beet juice can easily stain the corn in the salad too, masking that vibrant yellow color. To avoid this, simply mix the corn into the salad maximum 1 hour before serving.

Ingredients
- 2 medium beets,
- 1 cup boiled corn,
- 1 handful finely chopped parsley,
- Juice of half a lemon,
- Salt.
Preparation
- Peel the beets and boil,
- Cut into cubes and put on the serving platter,
- Add the corn, parsley, lemon juice and salt,
- Mix and serve.
