Creamy Beet Soup Recipe

Serving : 4 Servings

Ingredients

  • 2 small beets, peeled and chopped
  • 1 tablespoon butter,
  • 2 tablespoons flour,
  • 4 cups of water at room temperature,
  • 1 tsp powder coriander,
  • 1 tsp black pepper,
  • 1 tsp red pepper flakes,
  • Salt,
  • 4 tablespoons heavy cream.

Preparation

  1. Mekt the butter in a deep pan,
  2. Add the flour and roast for a few minutes constantly stirring,
  3. Add the beets and roast for a few more minutes,
  4. Add water and mix until no lumps,
  5. Cover the lid and cook until the beets are soft,
  6. After the beets are completely softened, whiz the soup with a hand blender and check the consistency (add boiling water until the desired consistency)
  7. Add salt and spices and stir,
  8. Cook for a few mins. more and remove from heat,
  9. You can add and stir in the cream with spices or you can pour over the bowls while serving.
