Creamy Beet Soup Recipe
Serving : 4 Servings
Ingredients
- 2 small beets, peeled and chopped
- 1 tablespoon butter,
- 2 tablespoons flour,
- 4 cups of water at room temperature,
- 1 tsp powder coriander,
- 1 tsp black pepper,
- 1 tsp red pepper flakes,
- Salt,
- 4 tablespoons heavy cream.
Preparation
- Mekt the butter in a deep pan,
- Add the flour and roast for a few minutes constantly stirring,
- Add the beets and roast for a few more minutes,
- Add water and mix until no lumps,
- Cover the lid and cook until the beets are soft,
- After the beets are completely softened, whiz the soup with a hand blender and check the consistency (add boiling water until the desired consistency)
- Add salt and spices and stir,
- Cook for a few mins. more and remove from heat,
- You can add and stir in the cream with spices or you can pour over the bowls while serving.
