Barley Salad Recipe Barley Salad Recipe


  • 1 cup barley, 
  • 1 cup boiled corn,
  • 3-4 pickled cornichons,
  • Optional pickled carrots,
  • 1 roasted red pepper,
  • 2 handfuls of chopped parsley, dill or any other greens you like,
  • Juice of half a lemon,
  • Olive oil,
  • Salt.


  1. Boil the barley,
  2. Drain and rinse with cold water,
  3. Add the chopped pickles and roasted red pepper,
  4. Stir in the chopped greens,
  5. Finally dress with salt, olive oil and lemon juice.
