Barley Salad Recipe
Serving : 4 Servings
Ingredients
- 1 cup barley,
- 1 cup boiled corn,
- 3-4 pickled cornichons,
- Optional pickled carrots,
- 1 roasted red pepper,
- 2 handfuls of chopped parsley, dill or any other greens you like,
- Juice of half a lemon,
- Olive oil,
- Salt.
Preparation
- Boil the barley,
- Drain and rinse with cold water,
- Add the chopped pickles and roasted red pepper,
- Stir in the chopped greens,
- Finally dress with salt, olive oil and lemon juice.
