Zucchini Dish With Bulgur
Ingredients
- 4 green zucchinis,
- 1 onion,
- 1/4 cup thick bulgur,
- 1 tablespoon tomato paste,
- 2 teaspoons paprika,
- 2 cloves garlic,
- 2-3 cups water,
- 3-4 tablespoons olive oil,
- Salt,
- 1 handful of chopped dill.
Preparation
- Finely chop the onion,
- Grate the garlic,
- Sauté in olive oil until transculent,
- Stir in the tomato paste and cook for 2-3 mins,
- Stir in the paprika,
- Now add in the zucchinis cut into cubes and sliced peppers, then stir,
- Put the lid on and cook for 5-10 mins,
- Add in the water and bulgur, then cool until the bulgur is fully softened.,
- Add salt and dill, stir and remove from heat.
