Turkish Orange Braised Leeks

Leeks are one of my favorite vegetables to use in olive oil dishes. This recipe combines the classic Turkish leek dish, traditionally made with carrots and rice, with orange for a refreshing twist on a familiar flavor. The distinctive aroma and gentle sweetness of orange are balanced by the tanginess of lemon, creating a light dish with a lovely citrus flavor.
Orange leek is a light and practical vegetable dish that is particularly well suited to winter tables, just like the classic Olive Oil Braised Leeks. It is also incredibly easy to prepare. Simply chop the vegetables, add all the ingredients to a pot, and let everything cook gently over low heat. As the leeks and carrots soften, the orange aroma gradually infuses the entire dish.
Ingredients for Orange Braised Leek
Along with leeks and carrots, I use rice, orange, and lemon in this recipe. As the rice cooks, it absorbs some of the liquid and releases starch, helping the dish develop a thicker consistency. Orange adds flavor both through its juice and its sliced flesh.
You can adjust the amount of olive oil in this dish to suit your taste. However, olive oil is one of the key ingredients that brings all the vegetable flavors together, so I recommend not reducing the amount too much.
How to Make Orange Braised Leek
First, peel one orange, cut it into round slices, and arrange them on the bottom of a pot. Add the diagonally sliced leeks and the round slices of carrot on top of the orange.
Drizzle the juice of the remaining half orange and the lemon juice over the vegetables. Then add the rice, olive oil, salt, and water. Cover the pot and cook over low heat until the leeks and carrots are tender.
Try not to stir the vegetables while they cook. This helps the leeks retain their shape without falling apart. As the rice absorbs the liquid, the dish will gradually thicken. If the liquid evaporates completely before the vegetables are tender, you can add a small amount of hot water.
Once the dish is cooked, let it rest for a while with the lid on. You can serve orange leek hot, warm, or cold. As with many Turkish olive oil dishes, its flavor develops even further as it rests. This also makes it an excellent make-ahead dish that you can prepare a day in advance for guests.
Tips for Making Orange Braised Leek
- Slice the leeks diagonally for a more attractive presentation and to help the pieces retain their shape when serving.
- Remove as much of the white pith from the orange as possible, as too much can give the dish a bitter taste.
- The sweetness of the orange balances the acidity of the lemon. If you prefer a tangier flavor, feel free to increase the amount of lemon juice slightly.
- Cook the dish covered over low heat rather than using high heat. This allows the vegetables to absorb their own juices and the added flavors more effectively.
- Let the dish rest before serving. This gives the olive oil and orange aroma time to blend with the vegetables.
How to Serve Orange Braised Leek
Orange braised leek can be served on its own as a light meal or as a vegetable side dish alongside a main course. It pairs particularly well with a yogurt salad and you can set up a classical dinner table with other meze recipes or olive oil dishes such as green beans with olive oil.
If you prefer to serve it cold, let it chill in the refrigerator before transferring it to a serving plate. Arrange the orange slices from the bottom of the pot alongside the vegetables. This not only makes the presentation more appealing but also highlights the citrus flavor.
