Traditional Beans With Pepperoni
Ingredients
- 2 cups dried white beans,
- 1 onion, chopped,
- 1 tbsp tomato paste,
- 2 tsps chilli,
- 3-4 tbsps vegetable oil,
- 4 cups boiling water,
- Salt to taste,
- Sliced pepperonies.
Preparation
- Soak beans in boiling water and set aside night over,
- Heat vegetable oil in a deep pan or pressured cooker,
- Add onions and fry until tender,
- Add tomato paste and fry for a few mins.,
- Add chilli and stir,
- Add drained beans and water, stir well,
- Cook in low heat until beans are tender,
- Fry pepperonies in a different pan and add to beans,
- Add salt, stir and remove from heat.
