Strawberry Cake Recipe
Ingredients
For sponge cake;
- 6 eggs (whites and yolks are separated),
- 1 cup of sugar,
- 1 cup of flour,
- 1/2 cup of starch (whether wheat or corn),
- Pinch of salt.
For pastry cream;
- 400 ml heavy cream,
- 200 g of cream cheese,
- 3/4 cup of powdered sugar.
Also;
- Milk to soak the sponge,
- Plenty of strawberries,
- Grated chocolate.
Preparation
- Beat egg yolks in a bowl with salt until stiff peaks,
- Add sugar and beat 2-3 mins. more,
- Beat egg yolks in a separate bowl,
- Add egg yolks to egg whites and beat until it is mixed well,
- Sift flour and starch in a seperate bowl,
- Add the mixture into the egg mixture and mix with a spatula carefully until to lumps,
- Pour the batter into a greased 23 cm springform pan,
- Bake in a 180 C degrees pre-heated oven until the toothpick comes clean,
- Set aside until it comes at room temperature and then remove from the pan,
- For cream pastry, beat the heavy cream with a mixer until it take a stiff form in a narrow and deep container,
- Add powdered sugar and beat for a few more minutes,
- In a different bowl beat the cream cheese with a hand mixer,
- Add the cream into the cheese part by part and beat with a hand mixer,
- Cut the sponge cake in three layers,
- Take the first layer into a serving plate,
- Spread the milk over with a spoon,
- Spread one third of the cream over,
- Place sliced strawberries,
- Put the second layer and soak it with the milk,
- Spread half of the remaining cream over,
- Place sliced strawberries,
- Put the last layer and soak it,
- Cover the top and edges of the cake with the remaining cream,
- Cover one side of the cake with strawberries,
- Sprinkle the grated chocolate on top,
- Set aside in the fridge for 2 hours before serving.
