Strawberry Cake and Easiest Cake Cream Ever Strawberry Cake and Easiest Cake Cream Ever


For sponge cake;

  • 6 eggs (whites and yolks are separated),
  • 1 cup of sugar,
  • 1 cup of flour,
  • 1/2 cup of starch (whether wheat or corn),
  • Pinch of salt.

For pastry cream;

  • 400 ml heavy cream,
  • 200 g of cream cheese,
  • 3/4 cup of powdered sugar.


  • Milk to soak the sponge,
  • Plenty of strawberries,
  • Grated chocolate.


  1. Beat egg yolks in a bowl with salt until stiff peaks,
  2. Add sugar and beat 2-3 mins. more,
  3. Beat egg yolks in a separate bowl,
  4. Add egg yolks to egg whites and beat until it is mixed well,
  5. Sift flour and starch in a seperate bowl,
  6. Add the mixture into the egg mixture and mix with a spatula carefully until to lumps,
  7. Pour the batter into a greased 23 cm springform pan,
  8. Bake in a 180 C degrees pre-heated oven until the toothpick comes clean,
  9. Set aside until it comes at room temperature and then remove from the pan,
  10. For cream pastry, beat the heavy cream with a mixer until it take a stiff form in a narrow and deep container,
  11. Add powdered sugar and beat for a few more minutes,
  12. In a different bowl beat the cream cheese with a hand mixer,
  13. Add the cream into the cheese part by part and beat with a hand mixer,
  14. Cut the sponge cake in three layers,
  15. Take the first layer into a serving plate,
  16. Spread the milk over with a spoon,
  17. Spread one third of the cream over,
  18. Place sliced strawberries,
  19. Put the second layer and soak it with the milk,
  20. Spread half of the remaining cream over,
  21. Place sliced strawberries,
  22. Put the last layer and soak it,
  23. Cover the top and edges of the cake with the remaining cream,
  24. Cover one side of the cake with strawberries,
  25. Sprinkle the grated chocolate on top,
  26. Set aside in the fridge for 2 hours before serving.
