Hunkar Begendi with Chicken Recipe
Serving : 4-6 Servings
Ingredients
- 2 chicken breasts,
- 1 onion,
- 1/4 cup vegetable oil,
- 1 tablespoon tomato paste,
- 2 tomatoes, grated,
- 2 teaspoons paprika,
- Salt.
For Begendi;
- 5 eggplants,
- 1 cup milk,
- 1,5 tablespoon flour,
- 1 tablespoon butter,
- Salt.
Preparation
- Roast the eggplants over stove or in the oven,
- Cut the chicken into bite-size pieces,
- Finely chop the onions and sauté in vegetable oil until tender,
- Add the tomato paste and stir for 1min,
- Add the paprika and stir,
- Add the chicken and sauté over high heat until the chicken turns golden brown on all sides,
- Add the grated tomatoes and salt, stir, put the lid on and cook over low heat for 10 mis,
- For begendi, melt the butter in a separate saucepan,
- Add the flour and stir for 1-2 mins,
- Peel and finely mince the roasted eggplants and add them to the flour mixture,
- Add the milk and salt, then cook until thickened,
- Serve the sautéed chicken over the begendi.
