Hunkar Begendi with Chicken Recipe

Hunkar Begendi with Chicken Recipe

Ingredients:

  • 2 chicken breasts,
  • 1 onion,
  • 1/4 cup vegetable oil,
  • 1 tablespoon tomato paste,
  • 2 tomatoes, grated,
  • 2 teaspoons paprika,
  • Salt.

For Begendi;

  • 5 eggplants,
  • 1 cup milk,
  • 1,5 tablespoon flour,
  • 1 tablespoon butter,
  • Salt.

Preparation:

  1. Roast the eggplants over stove or in the oven,
  2. Cut the chicken into bite-size pieces,
  3. Finely chop the onions and sauté in vegetable oil until tender,
  4. Add the tomato paste and stir for 1min,
  5. Add the paprika and stir,
  6. Add the chicken and sauté over high heat until the chicken turns golden brown on all sides,
  7. Add the grated tomatoes and salt, stir, put the lid on and cook over low heat for 10 mis,
  8. For begendi, melt the butter in a separate saucepan,
  9. Add the flour and stir for 1-2 mins,
  10. Peel and finely mince the roasted eggplants and add them to the flour mixture,
  11. Add the milk and salt, then cook until thickened,
  12. Serve the sautéed chicken over the begendi.
