Serradura Recipe

Serradura is a quite practical recipe prepared with very few ingredients from Portuguese cuisine. It has only three ingredients; heavy cream, sweetened condensed milk and biscuits. I will go over them one by one.

What is Heavy Cream, How is it Used?

Heavy cream is a dairy product made from milk fat. It is sold in liquid form and in the dairy aisles of grocery stores, usually in cardboard boxes. It has about 35% fat content. The versions used in pasta or soups may have a lower fat content, but if you are going to use them in desserts, you should make sure that the fat ratio is at least 35%.

Sweetened Condensed Milk

Until recently, sweetened condensed milk was not sold in Turkey, now it is possible to find it, albeit in limited brands. You can buy sweetened condensed milk or you can make it yourself with the sweetened condensed milk recipe.

Before I tried the recipe, I thought that sweetened condensed milk would leave its unique flavor. It didn't turn out like I thought. Sweetened condensed milk did not add anything other than make it sweet. So if you don't tell the Portuguese and it's between us, I think you can use the same amount of sugar instead of sweetened condensed milk.

Biscuits

Biscuits called Maria are used as biscuits in the Serradura recipe. If you can find it where you live, you can use Maria biscuits by sticking to the original recipe. Otherwise, you can use any biscuit, including store bought ones or homemade petit beurre biscuits.

When you look at the ingredients and the preparation of the recipe, it seems like it will be a very patisserie product like and creamy recipe. The recipe never misleads people and it does. If you like these kinds of recipes, serradura is a perfect recipe for you.

Since I was obliged to convey the original recipe, I did so. But if I were creating this recipe, I would add a layer of fruit or fruit puree in between and freshen its flavor. In fact, if you are going to try the recipe, I recommend that you do so. You can make thin banana slices or crushed raspberry layers between the layers, or you can use sauces such as pomegranate sauce or strawberry sauce in the homemade strawberry pudding recipe. As long as it stays between us, of course.

Serving : 4 Servings

Ingredients

  • 500 ml of heavy cream,
  • 1/2 cup of sweetened condensed milk,
  • 200 g biscuits.

Preparation

  1. Process the biscuits in a food processor,
  2. Beat the heavy cream in a narrow and deep bowl until it starts to thicken,
  3. Add sweetened condensed milk and whisk until completely thickened,
  4. Arrange in four serving cups as a row of whipped cream, a row of biscuits until the cups are full,
  5. You can garnish with chopped pistachios and fresh raspberries.
