Sweetened Condensed Milk Recipe
Sweetened condensed milk is one of the main products in some desserts and ice creams. If we explain it over the preparation method, we can say that it is milk cooked with sugar. Although it takes some time to make, it is a very simple recipe in terms of labor.
Only 2 ingredients, milk and sugar are used for the recipe. After melting the sugar in milk in a saucepan by constantly stirring, you leave it to cook on low heat. The preparation time of sweetened condensed milk varies greatly depending on the density of the milk you use. The less the amount of water and the more the milk solids are, the sooner it will be ready. On the contrary, the preparation time increases when you use milk with high water content. Therefore, semi-skimmed or skimmed milk is not very suitable for this recipe.
The color of the sweetened condensed milk you will get will also vary considerably depending on the content of the milk and therefore the cooking time. In Spain, even whole milk is very watery, so it takes up to an hour to cook it in desired consistency. Since the cooking time is prolonged, the sugar is caramelized and its color becomes darker than store bought products. When prepared with a more fatty (with high solid content) milk, the color will be lighter since the sugar will not cook for this long.
I underline these again and again, as I do not want you to think that you did something wrong. The colour and cooking period can change very much each time. Start making the recipe without expecting any color or time, so you don't have to doubt what you get afterwards.
Sweetened condensed milk is a kind of jam. If you have ever made jam (you can think of it as molasses also) or have saw it being made, you should know that the consistency of the jam when hot and after cooling is different, and it becomes thicker when it cools. This is the same for sweetened condensed milk. Therefore, consider this amount of thickening when removing from heat.

Preparation
- Take milk and sugar in a saucepan,
- Melt the sugar completely by stirring constantly over low heat,
- Increase the heat a little and boil it until it is reduced in half (for about 30-60 minutes),
- Remove from heat and let it cool completely,
- Share it into glass jars and cover the lids,
- You can store it in the refrigerator for 1 week and freeze up to 3 months.
