Pumpkin Borani With Ground Beef

We are mostly used to using pumpkin in desserts. However, when pumpkin’s naturally mild sweetness is combined with the right spices and savory ingredients, it can also work wonderfully in main dishes. I think this recipe is a great starting point for anyone who wants to try pumpkin in a savory dish.
Speaking of using pumpkin in savory recipes, I cannot go without mentioning two of my favorites, pumpkin soup and pumpkin sinkonta. And for those who like a little meat in the mix, I should also mention kabaklama.
The thing I loved most when I first made this dish was how perfectly all the ingredients came together to create a completely new flavor. Neither the pumpkin, the ground beef, nor any of the many spices dominates the dish. Instead, all these ingredients come together to create something entirely new. Soft, slightly caramelized pumpkin straight from the oven is topped with garlicky yogurt, followed by a spiced ground beef mixture with tomato paste. In every bite, sweet, spicy, tangy, and creamy flavors come together in perfect harmony.
The cardamom, cinnamon, ginger, turmeric, and garam masala I use for the pumpkin give the dish a subtle and delicious Indian cuisine inspired aroma. Cardamom may seem a little intense at first, especially because of its distinctive fragrance, but once it comes together with the pumpkin, it creates a wonderfully balanced flavor.
What’s more, it is much easier to make than you might expect. While the pumpkin is roasting in the oven, you can prepare the ground beef mixture and the yogurt sauce. Once everything is ready, all you have to do is layer the ingredients. I like to finish the dish with some chopped parsley and walnuts. The crunch of the walnuts is a particularly nice addition. Serve it with a plain rice pilaf or a fresh salad, and you have a satisfying and filling meal.
If you only use pumpkin for desserts, I definitely recommend giving this recipe a try. You may discover that pumpkin works beautifully in savory dishes too, perhaps even better than you expected.

Ingredients
For the Ground Beef Mixture:
- 800 g lean ground beef,
- 1 onion,
- 2 tablespoons tomato paste,
- 1 teaspoon sweet paprika,
- Salt,
- Black pepper,
- 3 to 4 tablespoons olive oil.
For the Pumpkin:
- 1 kg pumpkin,
- 2 to 3 tablespoons olive oil,
- 1/4 teaspoon black pepper,
- 1/4 teaspoon cinnamon,
- 1/4 teaspoon ground ginger,
- 1/4 teaspoon turmeric,
- 5 to 6 cardamom pods,
- 1/4 teaspoon garam masala,
- Salt.
For the Yogurt Sauce:
- 2 cups yogurt,
- 1 clove garlic,
- Salt.
Preparation
- Remove the cardamom seeds from their pods and crush them in a mortar until finely ground,
- Add the other spices and mix,
- Peel the pumpkin, cut it into cubes, and place it on a baking sheet lined with parchment paper,
- Add the olive oil, spices, and salt, and toss to coat,
- Roast in a preheated 180°C oven until tender,
- For the ground beef mixture, finely chop the onion and sauté it in the heated olive oil,
- Add the ground beef and cook until it releases its juices and the liquid evaporates,
- Add the tomato paste and cook, stirring, for another 2 to 3 minutes,
- Add the paprika, black pepper, and salt, and mix well,
- Cook for a few more minutes, then remove from the heat,
- For the yogurt sauce, whisk together the yogurt, grated garlic, and a little salt,
- Place the roasted pumpkin on a serving plate first,
- Spread the yogurt sauce over the pumpkin, then top with the ground beef mixture,
- If you like, garnish with chopped parsley and walnuts.
