Mushroom and Buckwheat Pilav Recipe
Buckwheat had its moment of popularity at one time. Surely, everyone has tried buckwheat at least once. Afterwards, while some people relegate buckwheat to the memories of unpleasant experiences, others continue to enjoy it occasionally. I belong to the second group. I know those in the first group who are reading this may find it hard to believe, but I actually like buckwheat. In fact, my go-to alternative to rice pilav is buckwheat pilav. I find buckwheat more flavorful than bulgur. It's delicious even without onions or vegetables, in my opinion. Bulgur pilav requires additional ingredients to enhance its flavor.
You might ask "Well then, why does this pilav contain mushrooms?". When I first tried this recipe, I had some leftover mushrooms from a chicken sauté I made the day before. I thought, why not add them to the pilav so they don't waste? I loved the flavor that the mushrooms imparted to the buckwheat, so much so that I started specifically buying mushrooms for this recipe. I always thought mushrooms complemented rice well anyway. I'm sure some of you who have tried my mushroom pilav recipe know that harmony. The same harmony is present in mushroom buckwheat pilav as well.
Honestly, I'm not a huge fan of the texture of mushrooms, but I love their smell and aroma. So, I can overlook the texture while eating them. If you feel the same way, I recommend finely chopping the mushrooms for mushroom recipes. That way, what stands out is the aroma and flavor of the mushrooms rather than their texture. I usually prepare them that way myself. I made an exception only for this photo and video shoot. Because when mushrooms are chopped like this for mushroom recipes, they look much nicer.
I enjoy tasting the flavor of the ingredients in dishes rather than overpowering them with spices, and I believe the aroma of mushrooms is more pleasant than any spice. That's why I didn't use any spices, but feel free to add any spices you think you'll enjoy.

Mushroom and Buckwheat Pilav Recipe with Video
Ingredients
- 1 cup of buckwheat,
- 1 small bowl (50 g) of mushrooms,
- 1 tablespoon of butter,
- Salt to taste,
- 2 cups of boiling water.
Preparation
- Rinse and drain the buckwheat,
- Melt the butter in a pan,
- Add the finely chopped mushrooms and sauté until golden brown, stirring constantly,
- Add the buckwheat and sauté for a few minutes,
- Add water and salt according to your taste, cover the pan,
- Cook over low heat until the water is absorbed,
- Remove from heat and let it rest for 15-20 minutes before serving.
