  • 4 kg red tomatoes,
  • 1 onion,
  • 3 cloves of garlic,
  • 4 celery stalks,
  • 1/3 cup sugar,
  • 1/3 cup vinegar,
  • 4 tbsps cornstarch,
  • 1 tbsp salt.


  1. Peel the tomatoes and grate or process with a blender and pour into a large cooking pan,
  2. Cut onion into four, dice garlic cloves, valve celery stalks and add into tomatoes,
  3. Cook in low heat for 1 hour, stirring occasionally,
  4. Drain with a fine strainer,
  5. Transfer into a smaller pan,
  6. In a mixing bowl beat vinegar, cornstarch and a scoop of tomato mixture and add into the pan,
  7. Cook until it thickens,
  8. Add sugar and salt and cook for 5 mins. more,
  9. Pour ketchup into glass jars and seal the jars tight,
  10. Place the jars into a pressure canner or pressure cooker and cover with hot water,
  11. Cover the lid and cook for 3-5 mins after the steam comes out,
  12. Remove the jars from water and dry with a towel,
  13. Turn the jars upside down and set aside overnight,
  14. Keep in a cool place away from sun.
