Ratatouille Recipe
Serving : 2 Servings
Ingredients
- 1 onion, finely chopped,
- 2 garlic cloves, very thinly sliced,
- 2 tomatoes, peeled and diced,
- 1 small eggplant,
- 1 small zucchini,
- 1 red bell pepper,
- 6 tablespoons olive oil,
- 1 cup of tomato puree,
- Salt and pepper.
Preparation
- Place finely chopped onions into a 17*22 cm baking dish,
- Add chopped garlic and pepper,
- Trim the ends off the eggplant and zucchini,
- With a very sharp knife, cut the eggplant, zucchini and tomatoes into very thin slices,
- Arrange slices of prepared vegetables into the baking dish,
- Drizzle 4 tbsps of olive oil over the vegetables and season them generously with salt and pepper,
- Cover dish with a piece of parchment paper cut to fit inside,
- Bake for approximately 45 to 5o minutes in a 190 C degrees oven,
- In a sauce pan heat 2 tbsps olive oil, add tomato puree and simmer for a few mins, remove from heat,
- Pour the sauce over vegetables,
- Bake again for 15 mins. without parchment paper.
