Ratatouille Recipe

Serving : 2 Servings

Ingredients

  • 1 onion, finely chopped,
  • 2 garlic cloves, very thinly sliced,
  • 2 tomatoes, peeled and diced,
  • 1 small eggplant,
  • 1 small zucchini,
  • 1 red bell pepper,
  • 6 tablespoons olive oil,
  • 1 cup of tomato puree,
  • Salt and pepper.

Preparation

  1. Place finely chopped onions into a 17*22 cm baking dish,
  2. Add chopped garlic and pepper,
  3. Trim the ends off the eggplant and zucchini,
  4. With a very sharp knife, cut the eggplant, zucchini and tomatoes into very thin slices,
  5. Arrange slices of prepared vegetables into the baking dish,
  6. Drizzle 4 tbsps of olive oil over the vegetables and season them generously with salt and pepper,
  7. Cover dish with a piece of parchment paper cut to fit inside,
  8. Bake for approximately 45 to 5o minutes in a 190 C degrees oven,
  9. In a sauce pan heat 2 tbsps olive oil, add tomato puree and simmer for a few mins, remove from heat,
  10. Pour the sauce over vegetables,
  11. Bake again for 15 mins. without parchment paper.
