For the pie crust;

  • 150 gr. cold butter,
  • 1 egg yolk,
  • 1/2 cup granulated sugar,
  • 2 cups flour.

For the filling;

  • 200 gr. heavy cream,
  • 200 gr. cream cheese,
  • 1/2 cup granulated sugar,
  • 1 egg,
  • 1 egg white,
  • 2 teaspoons starch,
  • Grapes.


  1. Cut the cold butter into cubes,
  2. Add to egg yolk, sugar and flour,
  3. Rub the butter with your hands into the other ingredients to make it into smaller pieces,
  4. Continue kneading with your hands until everything comes together to form a soft dough,
  5. Roll the dough out into a size a little larger than your tart pan,
  6. Grease the tart pan with butter,
  7. Place the dough into your tart pan and trim the sides,
  8. Refrigerate for 30 mins,
  9. Pickle the dough with a fork, bake in a 190 degrees Celsius oven until lightly golden, and let it cool,
  10. For the cheesecake batter, combine and whisk all the ingredients together in a large bowl,
  11. Place some grapes on the bottom of the pie crust,
  12. Pour the cheesecake batter over the grapes,
  13. Bake in a 180 degrees Celsius oven until the sides are golden brown,
  14. Turn the oven off, and let the cheesecake sit on the oven for 45 mins with the door of the oven slightly open,
  15. Serve chilled.
