Gluten-Free Vegan Mucver in a Sandwich Press

The original title of this recipe was actually “gluten-free vegan mixed vegetable fritters in a sandwich press,” but I thought assigning that many labels to a single recipe would make things difficult for all of us, so I shortened it a bit. While creating this recipe, I was inspired by two different dishes from two different countries.

The first one is yachaejeon, known as a Korean vegetable pancake. The second is kanda bhaji, an Indian-style onion fritter. Yachaejeon is made by mixing starch, various vegetables, and a small amount of seasoning. Kanda bhaji is made as shown in the link.

I combined the two: lots of vegetables like yachaejeon, plenty of spices and chickpea flour like kanda bhaji (you can also use buckwheat flour instead), and instead of frying, I cooked the mixture in a sandwich press without oil. The result was a mixed creation that works for gluten-free diets, vegan diets, and low-fat diets. Plus, it’s quite filling.

If you’re not vegan, you can serve it with yogurt. If you are vegan, serving it with vegan yogurt will increase both the flavor and how satisfying it is.

You can choose the vegetables based on what you have on hand and what you like. Just make sure to keep the quantities the same, and if you need to reduce or increase them, be careful to adjust the flour and water amounts accordingly.

You can also change the spices in the same way. Since this isn’t an authentic recipe, you don’t have a specific flavor target to achieve. It’s a recipe where you’re very free to make changes according to your own taste.

Ingredients

  • 1 cup chickpea flour or buckwheat flour,
  • 1 cup room-temperature water,
  • 200 g cauliflower,
  • 200 g broccoli,
  • 1 bell pepper,
  • 1/2 red onion,
  • 1 carrot,
  • 1 tablespoon olive oil,
  • 1 teaspoon garam masala,
  • 1 teaspoon turmeric,
  • 1 teaspoon red pepper flakes,
  • 1 teaspoon cumin,
  • Salt to taste.

Preparation

  1. Chop the cauliflower, broccoli, pepper, and onion into small pieces,
  2. Grate the carrot,
  3. In a large mixing bowl, whisk together the flour, water, spices, and salt,
  4. Add the vegetables and mix well,
  5. Preheat the sandwich press,
  6. Spoon the mixture into the press and close the lid,
  7. Once lightly browned, open the press, flip and turn the fritters, close again, and cook a little longer,
  8. Remove with a spatula,
  9. Repeat until all the batter is used.
