Boşnak Mantısı Recipe
Today, a new one is being added to the ten-odd different dumpling recipes that I have shared so far; boşnak mantısı (Bosnian dumplings). Boşnak mantısı is not stuffed and boiled ravioli like mantı as first comes to mind when you say mantı. It's actually a kind of pastry rather than a mantı. Served with yoghurt with garlic, similar to mantı, and topped with paprika heated in oil.
When you say mantı, I know that sauce with tomato paste comes to mind, not paprika heated in oil. But it is not a very distant way of serving. For example Sinop mantısı and psihalive are serves with paprika heated in oil.
Bosnian ravioli is opened at hand like a leek borek. I will share the making of it in reels on my Instagram account, but if you want to watch it in details, you can watch the video the leek borek. Just by putting two pieces of dough on top of each other, two phyllo rolls are rolled out together. In this way, it becomes more layered. The inner filling is used raw. Since I love all kinds of mantı with a lot of filling, and in large pieces, I also make boşnak mantısı with a lot of filling. While eating, you can taste the ground beef in it. If you like more dough and less filling, you can reduce the amount of ground beef and use a small onion for the filling.
If you want to make the boşnak mantısı smaller, you can make smaller phyllo dough and, accordingly, thinner rolls and smaller mantıs, by making eight phyllo dough instead of six.
How the mantıs are prepared?
The ground beef is placed in the widest part of the phyllo that you have rolled out in a round shape. Then, the phyllo is folded in half on the ground meat and rolled up in the form of a roll from the side with the ground meat. The dough is thinned a little more by pulling the roll from the middle to the edges. Then, it's cut about three fingers thickness and are folded again, arranged in the oven dish and baked.
Making boşnak mantısı is easier and takes less time than mantı. The dough rolls in about two or three minutes. The only thing that takes time in boşnak mantısı is the waiting times of the dough. They are also necessary for the phyllo dough to be extended easily in 2-3 minutes. So don't say "but", just wait.

Boşnak Mantısı Recipe with Video
Ingredients
For the dough;
- 1 cup of warm water,
- 1 tablespoon of olive oil,
- 2.5 cups of flour,
- 1 teaspoon of salt.
For the filling;
- 250 g ground beef,
- 1 onion,
- Salt,
- Black pepper.
To lubricate;
- 1 heaping tablespoon of butter,
- 1/4 cup olive oil.
For serving;
- 2 cups of yogurt,
- 1 clove of garlic,
- 1/4 cup olive oil,
- 1 teaspoon paprika,
- Salt to taste.
Preparation
- For the dough, take water, salt and olive oil in a deep bowl,
- Add the flour little by little and knead until the dough starts to come together,
- Take the dough on the counter and continue adding flour as needed and knead until you get a soft dough that does not stick to the hand,
- Cover and rest for ten minutes,
- Knead the dough again and divide it into six equal pieces,
- Cover and rest for five minutes more,
- Melt the butter and mix it with olive oil,
- Extend the dough pieces wider than a tea plate,
- Grease the pieces and put two of them on top of each other (make 3 groups of 2 pieces),
- Cover and rest for ten minutes more,
- Chop the onion finely and add it to the ground beef,
- Add salt and pepper and knead,
- Take one of the two pieces on the counter and grease it a little more and extend it thinly enough to see the bottom by pressing it with both hands, widening it and pulling it to the sides,
- Place one-third of the ground beef filling in the middle of the dough lengthwise,
- Fold the dough in half and wrap it in a roll form starting from the side with the ground beef,
- Thin the roll by pulling it from the middle to the sides without breaking it,
- Cut off three finger-wide pieces from the roll,
- Give a round shape by folding the pieces in half and joining the open ends at the bottom,
- Arrange the rounds in a greased 26 cm baking dish,
- Bake in a preheated oven at 190 C degrees until golden brown,
- Whisk yogurt, crushed garlic and salt in a bowl,
- Heat the olive oil in a sauce pan,
- Add the paprika, mix and remove from the heat,
- Take the mantı pieces on serving plates,
- Drizzle the garlic yoghurt on them and the paprika sauce on top of it.
