Kayseri Yağlaması Recipe
Kayseri yağlaması is one of the traditional recipes of Kayseri, the beautiful city located in the middle of Turkey. It is famous mainly for its mantı and pastırma (Turkish beef bacon), but yağlama also has the same importance with mantı for Kayseri. Kayseri is 1 hour drive to Cappadocia, the gorgeous touristic destination famous for its mind blowing geographical formations and baloons. If you ever visit Cappadoccia you should also stop by Kayseri to taste mantı, yağlama and pastırma.
Yağlama is prepared with a special tortilla like bread, lavas. In some cases an easy yağlama can be made with store bought tortillas but according to me it's not the same thing. So it's better to spare some time and prepare this unbelievably delicious meal.

Kayseri Yağlaması Recipe with Video
Ingredients
For Lavas;
- 3/4 cups warm water,
- 3/4 cup warm milk,
- 3.5-4 cup flour,
- 1 teaspoon instant yeast,
- 1 teaspoon sugar,
- 1 teaspoon salt,
- 2 tbsp vegetable oil.
For beef souce;
- 500 grams of ground beef,
- 1 onion, chopped,
- 1 green pepper, chopped,
- 3 tomatoes, chopped,
- 1 tablespoon tomato paste,
- 1 teaspoon ground sweet chili,
- 5-6 tablespoons of vegetable oil,
- Sal, pepper, cumin,
- 2 cups of boiling water.
Preparation
- For the dough combine water, milk, yeast and sugar in a deep bowl together,
- Add half of the flour part by part and start to knead,
- Add salt and oil and keep kneading,
- Add flour and knead until you reach a smooth dough,
- Make a ball and cover with a plastic wrap, set aside for 30-45 mins.,
- In the meantime prepare the beef sauce,
- Heat oil in a large pan, add into the ground beef and cook until changes colour,
- Add onions and peppers and sautee until tender,
- Add tomato paste and sautee until smells good,
- Add chilli and stir,
- Add tomatoes and cook for another few mins.,
- Add the water, cover the lid and cook for 10-15 mins.,
- Add salt and spices, stir and remove from heat,
- Knead the dough again and make 10 small balls,
- Roll one of the balls in a 24 cm. disc,
- Heat a pan and put the lavas into the pan,
- Cook both sides in high heat,
- Roll and cook rest of the balls in the same way,
- Heat the beef sauce,
- Put one lavas into a plate,
- Pour and spread some beef sauce over and put another lavas,
- Pour and spread some more beef sauce and put another lavas,
- Repeat the process for the remaining lavas and sauce,
- Serve hot with garlic or plain yogurt.
