Chicken Scotch Eggs Recipe

Serving : 4 Servings

Ingredients

For meatballs;

  • 400 g chicken breast,
  • 4 boiled eggs,
  • 1 onion,
  • 2 tablespoons breadcrumbs,
  • 1 tsp starch,
  • 1 tsp baking soda,
  • 1 handful of chopped parsley,
  • 1 tablespoon of olive oil,
  • Salt,
  • Black pepper,
  • Cummin,
  • Pepper flakes,

To fry;

  • 1 egg,
  • 1/2 cup flour,
  • 1/2 cup breadcrumbs,
  • Vegetable oil.

Preparation

  1. Pulse the chicken breast in a food processor,
  2. Take minced meat, grated onion, bread crumbs, starch, baking soda, parsley, olive oil, salt and spices in a deep bowl and knead thoroughly,
  3. Divide the mixture into 4 equal pieces,
  4. Beat the egg in a bowl,
  5. Spread each piece wide open in your palm and place the boiled egg in the middle of it and roll,
  6. Coat meatballs first with flour then the eggs and then the breadcrumbs,
  7. Heat the oil in a deep pan,
  8. Add into the meatballs and fry until golden.
