Blueberry Scones Recipe Blueberry Scones Recipe

Ingredients:

  • 100 g cold butter cut into cubes,
  • 1/2 cup sugar,
  • 100 ml heavy cream,
  • 1 small egg,
  • 2-2,5 cups flour,
  • 1 tsp baking powder,
  • Zest of 2 leamons,
  • 1 cup fresh or frozen blueberries,
  • 1 tbsp butter and 1 tbsp sugar for topping.

Preparation:

  1. In a deep bowl combine 2 cups of flour and sugar together,
  2. Add butter and make crumbs, rubbing with your both hands,
  3. Add baking powder and lemon zest, mix well,
  4. Add cream and egg and start to knead, add extra flour if necessary,
  5. Knead until you reach a soft dough,
  6. Add blueberries and knead trying not to smash blueberries,
  7. Make a ball of the dough and place into a baking pan covered with parchement paper,
  8. Press into a neat disc and cut into 8 equal wedges with a very sharp knife,
  9. Top with melted butter and a sprinkle of coarse sugar,
  10. Separate the scones so there is a little space between each one,
  11. Bake in a 180 C degrees pre-heated oven until lightly golden and cooked through.
