Blueberry Scones Recipe
Serving : 8 Slices
Ingredients
- 100 g cold butter cut into cubes,
- 1/2 cup sugar,
- 100 ml heavy cream,
- 1 small egg,
- 2-2,5 cups flour,
- 1 tsp baking powder,
- Zest of 2 leamons,
- 1 cup fresh or frozen blueberries,
- 1 tbsp butter and 1 tbsp sugar for topping.
Preparation
- In a deep bowl combine 2 cups of flour and sugar together,
- Add butter and make crumbs, rubbing with your both hands,
- Add baking powder and lemon zest, mix well,
- Add cream and egg and start to knead, add extra flour if necessary,
- Knead until you reach a soft dough,
- Add blueberries and knead trying not to smash blueberries,
- Make a ball of the dough and place into a baking pan covered with parchement paper,
- Press into a neat disc and cut into 8 equal wedges with a very sharp knife,
- Top with melted butter and a sprinkle of coarse sugar,
- Separate the scones so there is a little space between each one,
- Bake in a 180 C degrees pre-heated oven until lightly golden and cooked through.
