3 Ingredient Viral Apple Cake Recipe

Recently, this apple cake recipe kept popping up on social media, and because of the exaggerated reactions people gave after tasting it, I became quite curious about its flavor. There were two things I wondered about. First, whether the sweetness of the apple alone would be enough to give the dessert a cake-level sweetness, and second, whether I could achieve a cake-like, or at least brownie-like, texture without adding any dry ingredients.
Let me start with the first one. Surprisingly, the sweetness of a single apple provided more than enough sweetness for what I expect from a sugar-free recipe. I used a red, sweet apple. If you use a less sweet apple, of course, the sweetness will vary accordingly.
Now let’s move on to the second point. Unfortunately, I couldn’t achieve the texture of a cake or even something close to a brownie. If we must compare the texture to something, we might call it an overbaked soufflé. In short, it turned out far too moist to be considered a cake. This doesn’t mean it tasted bad, of course. In my opinion, it made a lovely sugar-free chocolate dessert, but it simply wasn’t a cake. Still, since it has been circulating on social media as a cake, I wanted to name it that way. I hope you’re reading this before trying it. I wouldn’t want you to attempt it with the intention of making a cake and end up disappointed.
Something else you might wonder about is the fact that the recipe contains no oil. To be honest, you don’t feel its absence, but if you want, you can add about a teaspoon of oil. So, does it stick to the ramekins? It’s already served without removing it from the ramekin. And because it has a moist texture, it doesn’t cling to the dish while eating.
The only drawback of the recipe is that the amount made with one apple and one egg is too much for one ramekin but not quite enough for two. I think the ideal would be to triple the recipe and bake it in two ramekins.

Preparation
- Remove the stem, bottom, and core of the apple,
- Roughly chop it and place it in a food processor,
- Add the egg and cocoa powder, then blend until smooth,
- Divide the mixture into 2 ramekins and bake in a preheated 180°C oven until the tops dry out and crack,
- If you like, you can garnish with pistachios and raspberries when serving.
