Chicken Scotch Eggs Recipe
Serving : 4 Servings
Ingredients
For meatballs;
- 400 g chicken breast,
- 4 boiled eggs,
- 1 onion,
- 2 tablespoons breadcrumbs,
- 1 tsp starch,
- 1 tsp baking soda,
- 1 handful of chopped parsley,
- 1 tablespoon of olive oil,
- Salt,
- Black pepper,
- Cummin,
- Pepper flakes,
To fry;
- 1 egg,
- 1/2 cup flour,
- 1/2 cup breadcrumbs,
- Vegetable oil.
Preparation
- Pulse the chicken breast in a food processor,
- Take minced meat, grated onion, bread crumbs, starch, baking soda, parsley, olive oil, salt and spices in a deep bowl and knead thoroughly,
- Divide the mixture into 4 equal pieces,
- Beat the egg in a bowl,
- Spread each piece wide open in your palm and place the boiled egg in the middle of it and roll,
- Coat meatballs first with flour then the eggs and then the breadcrumbs,
- Heat the oil in a deep pan,
- Add into the meatballs and fry until golden.
