Vegan Honey Recipe
Many non-vegans do not know, or perhaps have not thought about before, that honey is not vegan. Honey, which is an animal product, is a non-vegan food like other animal products and is not consumed by vegans. Since honey is not an ingredient that is often used in cooking, it is not a food that is often lacked in a vegan diet, as much as eggs. But it can be hard in another dimension which is missing the old habbits. That's why it's essential to have a good vegan alternative.
Just like vegan butter and vegan yogurt. Vegan honey is usually made by simply boiling apple juice and sugar, or sometimes apple juice, sugar, and lemon juice. I tried to provide a little more real honey flavor. Of course, it doesn't have classic flower honey flavor. Because one of its main ingredients is apple juice. In other words, intense fruit flavor and some fruit acidity are felt. But this aroma and acidity is not like jam flavor but fruit honey flavor. I also used rosemary, lavender, rose petals and orange peel flavors. You can change these flavors according to your taste. If you want them to be felt more intense, you can extend the simmering time of rosemary, lavender and orange and lemon peels in apple juice and increase the amount of rose water.
Normally, sugar is added to apple juice at the beginning and cooked for a long time. But when the sugar is cooked for a long time in this way, it starts to burn and the caramel taste comes out. In this case, not to feel the caramel taste and smell in the honey, I first evaporated the apple juice to a large extent and then added the sugar. In this way, neither the taste nor the smell of sugar in honey could be felt.
After preparing the honey, I had my husband to make a taste test without knowing. When ha came home, I wanted him to taste the honey. He asked "Did you do it ?" and laughed. He was trying to make a joke. "Just taste it." I said. He looked at me, then looked at the honey. He was trying to understand what I'm doing. He didn't like the taste of the last honey we bought. I guess he thought it was something like I added something to it and changed its aroma. He asked questions whether I added lemon to honey or added fruit juice. "How is it, tell me." I asked again. "It's better than before." he said. He couldn't believe it when I said it was vegan honey that I made myself. Because its consistency and color are exactly the same as real honey. Just, as I mentioned above, its flavor is like a different kind of honey.
After preparing vegan honey, you can store it in a glass jar at room temperature for weeks.

Vegan Honey Recipe with Video
Ingredients
- 1 liter of apple juice,
- 1 cup of sugar,
- 1 tablespoon of lemon juice
- 1 tablespoon of rose water,
- 1/2 teaspoon of lavender
- 1/2 teaspoon rosemary,
- A small piece of orange peel
- A small piece of lemon peel
- Turmeric with the tip of a teaspoon.
Preparation
- Take the apple juice in a saucepan and boil it on high heat until it reduces by half,
- Place lavender, rosemary, orange peel and tangerine peels in a tea ball strainer, drop them into the apple juice and simmer for ten minutes more,
- Remove the strainer,
- Strain the apple juice with cheesecloth or a very fine strainer and take it into a separate pot,
- Add turmeric, lemon juice, rose water and sugar and mix,
- Simmer until it reduces by half on high heat, check its consistency and remove from heat,
- Store in a glass jar at room temperature.
