Uzbek Pilaf RecipeUzbek Pilaf RecipeIngredients:

  • 250 g mutton, chopped,
  • 1 onion, chopped,
  • 1 carrot, grated,
  • 1 cup rice,
  • 3 tbsps vegetable oil,
  • 1 tbsp butter,
  • 2 cloves of garlic, whole,
  • 2 bay leaves,
  • 1 tsp cumin,
  • Salt to taste,
  • 4 cups of boiling water.

Preparation:

  1. Wash and draing the rice,
  2. Heat vegetable oil in a deep pan,
  3. Add mutton and cook until brownish,
  4. Add onion and cook until tender, constantly stirring,
  5. Add carrot and cook for another 3-4 mins.,
  6. Add bay leaves and 2 cups of water, cover the lid and cook until the mutton softens (about 30 mins.),
  7. 10 mins. before the mutton is cooked heat butter in a large pan,
  8. Add rice and sautee until crispy,
  9. Remove bay leaves from the pan and add sauteed rice, salt, cumin, garlic and remaining water, stir well,
  10. Cover the lid and cook until the rice is tender,
  11. Turn off the heat, set aside for 10-15 mis. before serving.
