Phyllo (Filo) Dough Borek Recipe
There are quite a few Turks living abroad, and with my English website reaching a considerable number of visitors, I have decided to include recipes that can be made with ingredients found overseas. The most suitable ingredient to start this category with is phyllo dough.
If you don't live in a country with a large Turkish population, like Germany, it is almost impossible to find freshly made Turkish yufka. Of course, you can make yufka from scratch, but not everyone has the time to do so. It is perfectly natural to want to prepare börek easily with store-bought yufka. The best alternative to Turkish yufka abroad is phyllo dough. Phyllo dough is a bit thicker than the dough used for baklava. Although it is more suited for making crispy böreks, it is also possible to achieve a börek with a moist and soft interior and a crispy crust by using the right ingredients.
For this, you need to use a mixture of milk and a small amount of yogurt as the sauce and not skimp on the oil. In short, just follow this recipe.
You can use any filling you like. For example, you can make it with ground beef by using the filling from the ground beef börek recipe, or with potatoes by using the filling from the potato börek with baklava dough recipe .
I recommend consuming the börek on the same day you make it or freezing it, as it will harden over time.

Phyllo (Filo) Dough Borek Recipe with Video
Ingredients
- 250 g phyllo dough,
- 1 cup milk,
- 1 tablespoon of plain yogurt,
- 1/2 cup of neutral oil,
- 250 g of curd cheese/cottage cheese/fat-free white cheese,
- 1 handful of chopped parsley,
- 1 egg yolk,
- Sesame seeds,
- Black cumin seeds.
Preparation
- Mix the cheese and parsley together,
- In a separate bowl, mix the milk and yogurt,
- Spread one sheet of phyllo dough on the counter,
- Drizzle the milk mixture and vegetable oil over it and spread with a brush,
- Place the cheese filling along the short edge, roll it up, and place it on a baking tray,
- Prepare the remaining dough in the same way and arrange them on the tray,
- Cut into pieces about three cm thick,
- Brush with egg yolk and sprinkle with sesame and black cumin seeds,
- Bake in a preheated oven at 190°C (375°F) until the tops are golden brown.
