Borek with Three Fillings Recipe with Video
Serving : 8-10 Servings
Ingredients
- 3 yufka sheets,
- 300 g spinach,
- 3 carrots,
- 3 potatoes,
- 1 teaspoon red pepper flakes,
- 2 tablespoons plain yoghurt,
- 1 cup milk,
- Vegetable oil,
- For the top: egg yolk and sesame seeds.
Preparation
- Grate the carrots and cook over medium heat with a pinch of salt and vegetable oil until softened,
- Finely chop the spinach and cook with a pinch of salt and vegetable oil until withered,
- Boil the potatoes and mash them adding some salt and red pepper flakes,
- Whisk the yoghurt and milk in a bowl,
- Spread one of the phyllo sheets on the kitchen counter,
- Brush the phyllo sheet with a little vegetable oil,
- Smear the yoghurt mixture on top,
- Then evenly spread the mashed potatoes on top,
- Now place the second phyllo sheet on top of the first,
- Repeat the same processes but spread the cooked carrots now, instead of potatoes,
- Finally place the last phyllo sheet on top of the other two,
- Repeat the same processes but spread the cooked spinach on top this time,
- Roll to form a long tube,
- Cut the tube in three pieces,
- Place both pieces on a baking sheet lined with parchment paper,
- Brush them with egg yolk and sprinkle sesame seeds on top,
- Bake in a 180 degrees Celsius preheated oven until golden brown.
