One of the most suitable recipes for the summer months is undoubtedly cold soups. When many people think of cold soup, the first soup that comes to mind is cold yogurt soup. This is quite natural with both its ease of preparation and its refreshing taste, but that does not mean it is true.

Although cold yogurt soup is a wonderful soup, it is not possible to spend an entire summer with the same soup. Although people often eat the things they love, they also look for change from time to time.

This is where cold soups such as gazpacho, batırık soup and arugula soup come into play. Today I wanted to share a new cold soup recipe that we can add among these delicious soups; Pasta cold soup recipe.

When my mother cooked pasta, when I was little, she did not drain the water, she made us eat the pasta with its broth. If you've ever eaten it, I'm sure you know how delicious pasta water is. In this cold soup recipe, I basically wanted to benefit from the flavor of pasta broth. Yoghurt, peas, carrots, onion and the spices I like were added to it to increase its nutritional value, resulting in a tremendous flavor.

You can diversify the soup by removing the ingredients other than the pasta used in the recipe, or adding other ingredients instead. For example, using fresh mint or dill instead of parsley can add a different flavor to the soup. For example, instead of peas, you can also use canned corn with the same ease of use. In short, it is entirely up to your creativity to diversify the soup.

Serving : 4 Servings

Ingredients

  • 250 g pasta of any kind or broken spaghetti,
  • 2 cups of plain yogurt,
  • 1 cup canned/boiled peas,
  • 1 cup canned/boiled carrots
  • 1/4 purple onion,
  • 1 teaspoon of dried mint,
  • 1 teaspoon of sumac,
  • Salt,
  • 6 cups of water,
  • Olive oil for topping.

How to make steps

Preparation

  1. Boil water in a deep pan,
  2. Add the pasta and cook until soft and remove from heat,
  3. Take the pot aside and wait until it cools down,
  4. After cooling, add yogurt and mix,
  5. Add peas and carrots,
  6. Chop the onion finely and add,
  7. Add salt and spices and mix,
  8. You can drizzle olive oil on it while serving.
