Vegetarian Chickpea Stew Recipe Vegetarian Chickpea Stew Recipe

Ingredients:

  • 2 cups chickpeas,
  • 1 onion,
  • 1 tablespoon tomato paste
  • 1 teaspoons paprika,
  • 4 tablespoons vegetable oil,
  • Salt,
  • Black pepper,
  • Water.

Preparation:

  1. Soak the chickpeas in warm water and let them sit overnight (or use canned chickpeas),
  2. Finely chop the onion,
  3. Sauté in oil until translucent,
  4. Add in the tomato paste and cook for 3 mins,
  5. Stir in the paprika,
  6. Add in the drained chickpeas and cook for 2 mins,
  7. Add enough water to submerge the chickpeas,
  8. Boil until the chickpeas are softened (Take 25 mins in a pressure cooker),
  9. Season with salt and black pepper before removing from heat.
