Berliner Recipe


  • 1 cup lukewarm milk,
  • 3 tbsps butter,
  • 3 egg yolks,
  • 3 tbsps sugar,
  • 2 tsps instant yeast,
  • 3-3,5 cups flour,
  • Vegetable oil for frying,
  • Cherry jam for filling,
  • Powdered sugar for topping.


  1. In a deep bowl, whisk together milk, melted butter, sugar and yeast,
  2. Add egg yolks and whisk,
  3. Add flour part by part and combine everything together to form a soft non-sticky dough,
  4. Cover the dough with a kitchen towel and let it rest in a warm spot until it becomes double the size (45-60 min.),
  5. Cut the dough in half,
  6. Roll one piece out on a well-floured surface,
  7. Cut in circle shapes using cookie / biscuit cutters,
  8. Cover the shapes and let them rest for 30 mins,
  9. Heat oil in a pan with high sides and fry the doughnuts on both sides,
  10. After they cool down pipe in the jam and sprinkle powdered sugar on top.
