Baked Vegetables With Tomato Sauce And Yogurt
Serving : 2 Servings
Ingredients
- 1 potato,
- 1 zucchini,
- 1 carrot,
- 2 green peppers,
- 1 red pepper,
- 1 tbsp vegetable oil,
For Saouce;
- 2 tomatoes,
- 1 tbsp tomato paste,
- 1 tsp dried mint,
- 2 cloves of garlic,
- 2 tbsps of plain yoghurt,
- Salt and pepper to taste.
Preparation
- Cut the potato, carrot and zucchini into cubes,
- Cut the peppers into long strips,
- In a large bowl combine the vegetables with vegetable oil, salt and pepper,
- Place a parchement paper into a baking sheet,
- Spread the vegetables on the paper,
- Bake at 200 C degrees until all the vegetables are tender,
- In a sauce pan combine grated tomatoes, tomato paste, dried mint and salt,
- Cook in low heat for 15 mins.,
- In a different bow mix yogurt with salt and minced garlic,
- Take cooked vegetables into a serving dish,
- Top first with tomato sauce and than yogurt mixture.
