Baked Vegetables With Tomato Sauce And Yogurt

Serving : 2 Servings

Ingredients

  • 1 potato,
  • 1 zucchini,
  • 1 carrot,
  • 2 green peppers,
  • 1 red pepper,
  • 1 tbsp vegetable oil,

For Saouce;

  • 2 tomatoes,
  • 1 tbsp tomato paste,
  • 1 tsp dried mint,
  • 2 cloves of garlic,
  • 2 tbsps of plain yoghurt,
  • Salt and pepper to taste.

Preparation

  1. Cut the potato, carrot and zucchini into cubes,
  2. Cut the peppers into long strips,
  3. In a large bowl combine the vegetables with vegetable oil, salt and pepper,
  4. Place a parchement paper into a baking sheet,
  5. Spread the vegetables on the paper,
  6. Bake at 200 C degrees until all the vegetables are tender,
  7. In a sauce pan combine grated tomatoes, tomato paste, dried mint and salt,
  8. Cook in low heat for 15 mins.,
  9. In a different bow mix yogurt with salt and minced garlic,
  10. Take cooked vegetables into a serving dish,
  11. Top first with tomato sauce and than yogurt mixture.
