Vegan Avocado Sandwich Recipe
For me, sandwiches have been cheese plus another ingredient in my whole life. Like cheese and tomato, cheese and cucumber, cheese and avocado. And it has never been a main dish for me. Sandwiches are snacks for me. I've never eaten at that famous chain sandwich shop because I couldn't find a sandwich that looked good or appealing to me, and which I thought would fill my stomach. This distant relationship between us and sandwich changed during our trip to Prague a few years ago. There is a chain of sandwich shops on almost every street in Prague. Maybe there are in other cities as well, I only saw it there. The sandwiches I ate there showed me that sandwiches are something that can be filling and enjoyed.
After that, I started to pay more attention to the sandwiches I made and to think more about the sandwich category. Vegan sandwich options also benefited from these thinking sessions. Making non-vegan sandwiches isn't all that difficult after all. Cheese, chicken, salami, eggs, etc. It offers so many choices for sandwiches. Of course, cheeses such as vegan mozzarella can be used for vegan sandwiches. But I think it should be possible to make sandwiches without using vegan substitutes. For this purpose, I have created this recipe that is both satisfying and nutritious with easily available ingredients. I am sure that those who have tried my vegan chickpea sandwich will love this recipe as well.
I used walnuts as a base. I processed the walnuts until they were spreadable. You can also use peanut butter instead. I especially chose walnuts because I love walnuts and avocados together. You can use avocado as a slice or as a guacamole sauce. You can boil the beet in its skin, peel it after boiling it, or peel it, slice it and boil it that way. Both methods will offer different advantages. You can boil and freeze the beetroot and use it immediately by defrosting it for your sandwiches. I added the sandwich's sauce and salt into the corn mix. Chopping the corn and mixing it with the sauce also made it easier for the sandwich to stand without falling apart.
It is a delicious sandwich with everything for my taste. A giant sandwich is obtained with these ingredients. You can share this giant sandwich with someone else, or you can enjoy it alone.

Vegan Avocado Sandwich Recipe with Video
Ingredients
- 1 large or 2 small sandwich loaves,
- A handful of walnuts,
- 1/2 avocado,
- 1 boiled beetroot,
- 1/2 cup of canned corn,
- Juice of 1/4 lemon,
- 1/2 teaspoon djon mustard,
- Salt,
- Black pepper.
Preparation
- Pulse the walnuts in a food processor until it reaches a spreadable consistency,
- Cut the sandwich bread in half without separating one side,
- Spread the walnut paste between the bread,
- Place the sliced avocado on it,
- Arrange the beet slices on it,
- Roughly chop the corn and take it in a bowl,
- Add Djon mustard, lemon juice, salt and pepper and mix,
- Place the mixture inside the sandwich bread.
