  • 3 kg cornichons,
  • 7-8 carrots,
  • 2 cups chopped cabbage,
  • 20 cloves,
  • 4 lt. water,
  • 2 cups wine vinegar,
  • 8 tablespoons coarse salt,
  • 2 tablespoons sugar.


  1. Put the water in a large pot and add in the salt, sugar and vinegar,
  2. Boil until everything dissolves and let it cool completely,
  3. Wash the cornichons (gherkins) and carrots, and cut the carrots into large chunks,
  4. In a 6 lt. glass jar, place 1 layer of cornichons,
  5. Put some carrots and cabbage on top,
  6. Place several garlic cloves on top,
  7. Then put another layer of cornichons and repeat this pattern until the jar is full,
  8. Pour the vinegar mixture into the jar until you fill it completely (you will have about 1 cup of excess liquid. Store this liquid in a closed container and use it to refill the jar whenever you need),
  9. Place a folded freezer bag on top of the jar and put the lid on,
  10. Store somewhere dark and cool,
  11. Check on it every 2-3 days and pour in some of the vinegar mixture if needed,
  12. It will take 3-4 weeks for the vegetables to soften and be ready to eat.
