Ingredients:
- 3 kg cornichons,
- 7-8 carrots,
- 2 cups chopped cabbage,
- 20 cloves,
- 4 lt. water,
- 2 cups wine vinegar,
- 8 tablespoons coarse salt,
- 2 tablespoons sugar.
Preparation:
- Put the water in a large pot and add in the salt, sugar and vinegar,
- Boil until everything dissolves and let it cool completely,
- Wash the cornichons (gherkins) and carrots, and cut the carrots into large chunks,
- In a 6 lt. glass jar, place 1 layer of cornichons,
- Put some carrots and cabbage on top,
- Place several garlic cloves on top,
- Then put another layer of cornichons and repeat this pattern until the jar is full,
- Pour the vinegar mixture into the jar until you fill it completely (you will have about 1 cup of excess liquid. Store this liquid in a closed container and use it to refill the jar whenever you need),
- Place a folded freezer bag on top of the jar and put the lid on,
- Store somewhere dark and cool,
- Check on it every 2-3 days and pour in some of the vinegar mixture if needed,
- It will take 3-4 weeks for the vegetables to soften and be ready to eat.
