Butter Shrimp Over Potato Puree
Butter shrimp is one of my favorite forms of shrimp. But as a side dish, you can't get enough of them. I rolled up my sleeves to make buttered shrimp a main dish with a very simple addition, and this is what it turned out to be.
I used a bed of mashed potatoes to make the buttered shrimp more hearty.
You can buy the shrimp fresh and clean it yourself, or you can buy it cleaned and frozen. If you are going to use fresh shrimp, do not forget to add 100 g extra for their shells, the amount in the recipe is the weight of the cleaned form.
You can pair butter shrimp over potato puree with fish soup from the front and rocket salad with roasted peppers on the side. In this way, it will be a satisfying, nutritious and light menu. But of course you can increase or decrease the number of dishes on the menu according to the crowd at the table. For example it will be a hearty menu for one person, without soup, with a simple salad on the side.
Since the butter in the shrimp and the cheddar in the puree will harden when they wait, you should serve the dish immediately after preparing it. In case it needs to wait, you can heat it in separate pans on the stove or in the microwave after combining together.
