Sweetened cornflakes can disrupt the flavor balance of the chicken. Using unsweetened, natural cornflakes allows the spices to stand out and prevents the sugar from burning during baking and turning the dish into something less healthy.
The Lightness of Oven Baking
In classic crispy chicken recipes, frying is usually the preferred method. In this recipe, however, the chicken is baked in the oven, making it much lighter and healthier. When baking the chicken, using cooking spray helps distribute the oil evenly over the coating. If you don’t have spray oil, you can achieve the same effect by drizzling small amounts of oil over the chicken with a teaspoon.

Ingredients
- 800 g chicken breast,
- 3 cups plain cornflakes,
- 1 egg,
- 2 tablespoons olive oil,
- 1 teaspoon sweet paprika,
- 1 teaspoon red pepper flakes,
- 1/2 teaspoon black pepper,
- 1 teaspoon lemon zest,
- 1 teaspoon thyme,
- 1 teaspoon salt.
Preparation
- Slice the chicken breast into thin strips and place them in a bowl,
- Add the egg, salt, and spices and mix well,
- Coat each chicken piece in the crushed cornflakes,
- Arrange the coated pieces on a baking tray lined with parchment paper,
- Spray oil over the chicken pieces,
- Bake in a preheated oven at 190°C (375°F), turning once halfway through, until golden and crispy.
