Ingredients
For the sheets:
- 2 eggs,
- 50 g yogurt,
- 1 teaspoon psyllium husk,
- Salt.
For the filling and topping:
- 400 g spinach,
- 100 g white cheese (feta cheese),
- 1 tablespoon olive oil,
- 50 g grated mozzarella or kashar cheese.
Preparation:
- Place the eggs, yogurt, psyllium husk, and salt into a food processor or use an immersion blender, and blend until smooth,
- Spread the mixture in a very thin layer onto a baking tray lined with parchment paper,
- Bake in a fan-assisted oven preheated to 160°C (320°F) until the edges are lightly golden,
- Meanwhile, prepare the filling by sautéing the spinach in heated olive oil,
- Remove from the heat, add the crumbled white cheese, and mix,
- Cut the baked pastry sheet into 4 pieces measuring approximately 15x20 cm,
- Place one piece into a greased 15x20 cm baking dish,
- Spread one-third of the spinach filling over it,
- Place another pastry sheet on top,
- Spread half of the remaining spinach filling over it,
- Place another pastry sheet on top,
- Spread the remaining spinach filling over it,
- Top with the final pastry sheet and sprinkle with the grated cheese,
- Bake in a preheated oven at 180°C (350°F) until golden brown on top.
