Green Lentil Yogurt Soup Recipe
Serving : 6 Servings
Ingredients
- 1 cup of green lentils,
- 1 cup of erişte (Turkish noodles) or orzo,
- 3 tbsps yogurt,
- 1 egg yolk,
- 1 tablespoon butter,
- 1 tablespoon olive oil,
- 1 tablespoon of flour,
- 2 tsp dried mint,
- 8 cups of boiling water,
- Salt to taste.
Preparation
- Take washed and drained green lentils into a pot, add water and cook until tender,,
- Add 8 glasses of boiling water to a pot and add the erişte and cook in low heat until soften,
- Add boiled green lentils and mix,
- Beat yogurt, egg yolk and flour in a separate bowl until you get a smooth consistency,
- Take 1-2 ladle soup and add into yogurt mixture and mix quickly,
- Add this mixture to the soup quickly and mix quickly,
- Take butter and olive oil in a saucepan and heat,
- Add dried mint, mix and remove from heat,
- Add the sauce and salt into the soap, mix and remove from the heat.
