The result was a truly special flavor.

Green beans and chicken kapama not only tastes great but also offers a healthy meal. Chicken supports muscle development with its high protein content, while green beans and rice provide a balanced source of carbohydrates and fiber to keep your energy steady. Green beans are also rich in vitamins and minerals, and the tomato paste used in the dish is high in lycopene, which protects the body against free radicals.

The dish resembles both traditional chicken stews and chicken paella due to its ingredients, yet it has a unique flavor distinct from both. I love how the kitchen can offer brand-new experiences with just a few ingredient swaps or technique changes.

Is Chicken Broth Necessary?

I used to think adding chicken broth to a dish made with chicken was unnecessary, since adding water to chicken naturally creates chicken broth. But in practice, it doesn’t work that way. When you add chicken broth to the chicken, it results in a much richer and more aromatic flavor. One of the best examples of this is poulet yassa, where the chicken cooked in chicken broth achieves a unique aroma that’s hard to describe.

Using chicken broth also enhances the nutritional value of the dish. Chicken broth, with its collagen and mineral content, supports the immune system and improves digestive health. However, if you don’t have chicken broth on hand, you can use hot water instead. Still, remember that chicken broth will elevate the dish's flavor to another level.

Which Chicken Parts Should Be Used?

In this recipe, you can use pieces from a whole chicken or opt for different parts like thighs, drumsticks, or wings. You can also substitute fresh black-eyed peas for the green beans to diversify the recipe. No matter which ingredients you choose, this dish will surely bring health and flavor to your table.

Ingredients

  • 500 g of bone-in chicken pieces,
  • 500 g of green beans,
  • 1 onion,
  • 1 tablespoon of tomato paste,
  • 3/4 cup of rice,
  • 4 tablespoons of olive oil,
  • 1 cup of hot water,
  • 1.5 cups of chicken broth,
  • Salt to taste.

How to make steps

Preparation

  1. Heat the olive oil in a large pan and brown the chicken pieces on all sides (you can cover the pan to avoid oil splatters),
  2. Push the chicken to the side, add the chopped onion, and sauté until soft,
  3. Add the tomato paste and cook until fragrant, then mix with the chicken,
  4. Add the chopped green beans and stir,
  5. Add the hot water and chicken broth, cover, and cook until the green beans are tender,
  6. Add the rinsed and drained rice and mix well,
  7. Season with salt, cover, and cook on low heat until the liquid is absorbed.
