Torta Nua Recipe
Torta nua is a cake from Italian cuisine with a legendary taste and consistency. It is baked by pouring pudding over the classic cake dough and turns into a kind of moist cake. When the pudding heats up in the oven, its consistency thickens and it acquires a consistency close to liquid. Of course, it thickens again as it cools, but when it comes out of the oven and reaches sliceable temperature, the consistency and taste of the slice you get will be perfect.
When I tasted torta nua, I asked myself, "Could this be the most delicious cake in the world?". My marble pound cake, chocolate chip pound cake with orange zest and bundt cake with forest fruits recipes immediately came to mind. These three are my favorite cakes. With torta nua, my favorite cakes have increased to four. Although torta nua makes me feel more like a cake than a pound cake, I think the fact that it is baked entirely in the oven requires it to be in the cake category.
Torta nua is a very easy cake to make compared to the end result. The only downside is having to wait for the pudding to cool. You can solve this by preparing the pudding a day in advance and keeping it in the refrigerator. This way, you can prepare torta nua in the same time as making a classic pound cake.
Can it be made without fruit?
By the way, no fruit is used in the classic torta nua. It is prepared with only cake dough and pudding. There are fruit versions, too, but that's not the first thing that comes to anyone's mind when they think of torta nua. I was sure that forest fruits would go well with this cake, so I added blueberries as well. When I tasted it, I saw how right I was. It would have been very good in its simple form, but it was even better this way.
What other fruits can be used?
I'm sure this question will be asked, so let me answer it quickly. You can use any fruit as soft as blueberries. For example, black mulberries, blackberries, raspberries and sour cherries are the fruits that first come to my mind. Fruits such as peaches or apricots can also be used if they are very soft. However, fruits that make a crunching sound when cut (such as apples) or are very juicy, such as oranges or tangerines, may not be suitable for this cake.
Finally, it is worth mentioning that you should wait for the cake to cool down enough to remove it from the mold in order to prevent it from falling apart. Even if it has cooled sufficiently, you must first separate the edges from the mold with a silicone spatula or knife.

Ingredients
For the pudding:
- 400 ml of milk,
- 1 heaping tablespoon of flour,
- 1 heaping tablespoon of cornstarch,
- 1 egg yolk,
- 4 tablespoons of sugar,
- 1 slice of lemon peel.
For the cake:
- 2 eggs,
- 3/4 cup of sugar,
- 1/2 cup of neutral oil,
- 1 cup of milk,
- 2 cups of flour,
- Grated peel of 1 lemon,
- 10 g of baking powder,
- 1 cup of blueberries.
Preparation
- For the pudding, set aside 1/4 cup of the milk and take the rest in a sauce pan,
- Add the lemon peel and take it on the stove, heat it without letting it boil and remove it from the stove,
- Mix the sugar, the milk you set aside and the egg yolk into a bowl,
- Add flour and cornstarch and whisk,
- Remove the lemon peel from the heated milk, add the milk little by little to this mixture, and whisk quickly,
- Pour the mixture back into the sauce pot, take it on the stove and cook, stirring constantly, until it thickens and remove it from the heat,
- Wait until it cools down, stirring frequently to prevent forming a skin,
- For the cake, whisk the eggs and sugar into a mixing bowl,
- Add oil and milk and whisk,
- Add the flour gradually and beat,
- After adding half of the flour, add baking powder and lemon peel along with the flour and whisk,
- Add the remaining flour gradually, checking the consistency of the dough, and mix as needed,
- Pour the mixture into a greased 22 cm springform mold,
- Take the pudding spoon by spoon and put it on the dough piece by piece,
- Drizzle blueberries on top,
- Place it in a preheated oven at 180 C degrees and bake until the toothpick test comes out clean,
- After it cools down, you can take it out of the mold and slice it and serve it.
