Shakshuka (Fried Vegetables) Recipe
Serving : 4 Servings
Ingredients
- 3 potatoes,
- 2 eggplant,
- 2 zucchinis,
- 2-3 green peppers,
- 2 red peppers,
- 2 tomatoes,
- 1 onion,
- Garlic,
- Yoghurt,
- Oil,
- Salt.
Preparation
- Cut the potatoes, eggplants and zucchinis into cubes,
- Cut the peppers into long strips,
- Heat oil in a large frying pan with high sides,
- Fry the potatoes then remove and drain on a sieve,
- Now fry the zucchinis with the same oil,
- Place the potatoes in the sieve in a large bowl and season with salt,
- Then remove the zucchini from the oil and drain on the same sieve,
- Now mix the zucchini with the potato,
- Fry the eggplants and peppers the same way,
- Grate and sauté the onion in a little oil,
- Add in the grated tomato and cook for 10 mins,
- Sprinkle some salt and remove from heat,
- Pour the tomato sauce over the fried veggies,
- Pour over some crushed garlic flavored yoghurt,
- Decorate with parsley leaves and serve.
