Shakshuka (Fried Vegetables) Recipe

  • 3 potatoes,
  • 2 eggplant,
  • 2 zucchinis,
  • 2-3 green peppers,
  • 2 red peppers,
  • 2 tomatoes,
  • 1 onion,
  • Garlic,
  • Yoghurt,
  • Oil,
  • Salt.


  1. Cut the potatoes, eggplants and zucchinis into cubes,
  2. Cut the peppers into long strips,
  3. Heat oil in a large frying pan with high sides,
  4. Fry the potatoes then remove and drain on a sieve,
  5. Now fry the zucchinis with the same oil,
  6. Place the potatoes in the sieve in a large bowl and season with salt,
  7. Then remove the zucchini from the oil and drain on the same sieve,
  8. Now mix the zucchini with the potato,
  9. Fry the eggplants and peppers the same way,
  10. Grate and sauté the onion in a little oil,
  11. Add in the grated tomato and cook for 10 mins,
  12. Sprinkle some salt and remove from heat,
  13. Pour the tomato sauce over the fried veggies,
  14. Pour over some crushed garlic flavored yoghurt,
  15. Decorate with parsley leaves and serve.
