Flavor Details
This is my favorite version of steamed anchovies—simple, natural, and delicious. However, you can add garlic, tomatoes, or lemon slices to enhance the aroma if you wish. Feel free to adjust the recipe according to your taste. Additionally, you can remove the bones while cleaning the anchovies for easier eating, or simply remove them while eating if you prefer less preparation.

Hamsi Buğulama Recipe with Video
Ingredients
- 1 kg fresh anchovies,
- 1 onion,
- 1 red pepper,
- 1 potato,
- A handful of parsley,
- 2 tbsp olive oil,
- Salt to taste.
Preparation
- Clean the anchovies by removing the insides and heads,
- Slice the onion into half-moons, cut the pepper into thin strips, and slice the potato into rounds,
- Layer the potato slices on the bottom of a greased 40 cm baking tray,
- Spread the onion and pepper slices on top of the potatoes,
- Drizzle olive oil over the vegetables and sprinkle with salt,
- Arrange the anchovies on top, season with salt, and drizzle with more olive oil,
- Place chopped parsley in the center of the tray,
- Cover the tray with parchment paper,
- Bake in a preheated oven at 180°C for half an hour,
- Remove the parchment paper and bake for another 10 minutes.
