Gluten And Yeast Free Bread Recipe
The urge to share a gluten and yeast free bread recipe occured to me after receiving a comment on gluten free hamburger bun recipe asking for a gluten and yeast free version of it. The person who made the comment also had yeast intolerance together with gluten intolerance. Unfortunately, yeast and other leavening agents are not ingredients that can be used interchangeably with such minor changes. That's why I promised to work on both gluten and yeast free bread.
Today, I am sharing this recipe with the pride of keeping this promise in the best possible way. I would like to thank the person who made this comment on the gluten-free hamburger bun recipe for helping to create such a beautiful recipe. I try to share recipes suitable for different diets as much as I can, but unfortunately I can't think of all of them. For example, I knew about yeast intolerance, but it never occurred to me to share a recipe for yeast free bread. I hope it will be a recipe that finds a chance to reach those who need it.
Frankly, I was a little bit scared when I started working on the recipe. The consistency of yeast and baking powder is very different from each other, and pastries with baking powder tend to dry out and crumble as they wait. See; cake recipes. Moreover, this is true even though it contains ingredients such as milk, oil and eggs which are tend to soften the dough. Just imagine the dough to be made with just water and flour, even gluten-free flour. It is inevitable that it will be a hard and dry. The way to prevent this disaster is to make a few additions to give the dough elasticity. I used two ingredients for this; psyllium husk and tapioca starch. I used psyllium husk also in gluten free hamburger buns. It gives really successful results in gluten-free doughs, but I wasn't sure if it would be possible to achieve the same success without yeast. It did. I also added tapioca starch, which will make the dough more elastic, even without the psyllium husk powder. I kept the amount of baking powder a little more than the classical dough with baking powder. I really liked the consistency of the gluten-free hamburger bun. This was even better than that.
This recipe is like magic. I have never seen a bread recipe that can keep its consistency for days with baking powder and can take shape (hamburger bread, sandwich bread, etc.) In short, I created a recipe that I am really proud of.
The most important thing to note about the recipe is the baking duration. Although the breads seem to bake quickly as they are small, they take a long time to bake inside due to the ingredients they contain. Therefore, do not rush to take them out of the oven. Although it definitely changes according to the oven you use, they take around 40 minutes to 1 hour to bake.

Gluten And Yeast Free Bread Recipe with Video
Ingredients
- 1 cup of buckwheat flour,
- 1 cup of tapioca starch,
- 500 ml of warm water,
- 30 g of psyllium husk powder,
- 1/2 tablespoon of sugar,
- 1.5 packets (15 g) of baking powder,
- 1 teaspoon salt,
- 2 tbsps of olive oil.
For topping:
- 2 tablespoons of water,
- 1 tablespoon of molasses,
- Sesame seeds.
Preparation
- Take psyllium husk and water in a mixing bowl and mix,
- Wait a few minutes until it thickens,
- Add sugar, olive oil and baking powder and mix,
- Add the flour and starch gradually and start mixing,
- Add salt in half of the flour and mix,
- Add the remaining flour little by little and knead,
- Make four rounds from the dough and place them on a baking tray lined with greaseproof paper,
- Mix molasses and water and spread it on top of the buns,
- Sprinkle sesame seeds on them,
- Bake in a preheated oven at 190 degrees until golden brown.
