Gluten Free Hamburger Buns
Psyllium husk is a natural ingredient that provides binding in gluten-free pastry recipes. Psyllium husk is not only a gluten-free food additive, but also a very healthy food that is used as a supplement for intestinal health because it is a prebiotic food as well. It is also a food supplement for heart health and balancing insulin level.
After making peace with psyllium husk, which sounds like a very chemical substance , let's talk a little about the recipe. I recently shared a gluten-free bread recipe without any additives. I used potatoes as a binder in that recipe. Potato is a good binder, but not as strong as psyllium husk. Therefore, it is not possible to obtain a dough with a kneadable consistency. Since the dough cannot be made thick enough to be kneaded, it is not possible to shape it.
In this recipe, as well, it is not possible to obtain a perfect dough that can be easily shaped like the dough made with store bought gluten-free flours, but it is still shaped, albeit difficult. In fact, it is possible to obtain a shapeable dough when enough flour is added, but then the carbon dioxide gas produced by the yeast is not enough for the compacted dough to form chambers and rise. In short, the dough does not rise well and the bread is not as soft as it should be. Therefore, in my opinion, the consistency that still sticks to the hand and is still malleable is the ideal consistency.
In gluten-free bread, there is no need to knead the dough, wait for it to rise, and then knead it again, as in standard flour recipes. The purpose of doing this in gluten-containing breads is to strengthen the gluten structure. Since there is no gluten in gluten-free doughs, there is nothing to strengthen. Therefore, there is no point in kneading the dough again and destroying the resulting air spaces. Kneading the dough and shaping it without waiting and baking it right after the bread rises give the best consistency.
Can Other Bread Be Made With The Same Dough?
Yes it can be done. With the same dough you can make anything made with basic bread dough, including pizza.

Gluten Free Hamburger Buns with Video
Ingredients
- 1 cup of buckwheat flour,
- 1 cup of rice flour,
- 500 ml of warm water,
- 30 g psyllium husk powder,
- 10 g of instant yeast,
- 1 teaspoon of sugar,
- 1 teaspoon salt,
- Sesame seeds for topping.
Preparation
- Take psyllium husk and water in a mixing bowl and mix,
- Wait a few minutes until it thickens,
- Add sugar and yeast and mix,
- Add the flours gradually and start mixing,
- Add salt in half of the flour and mix,
- Add the remaining flour gradually and knead,
- Make four balls from the dough and place them on a baking tray lined with greaseproof paper,
- Sprinkle sesame seeds on top,
- Let them rest 30-40 mins.,
- Bake in a 190 C degrees preheated oven until golden brown.
