Baked Crispy Anchovies

Black Sea cuisine is a culinary tradition that stands out for its seafood and dishes rich in leafy greens. Although its tendency to keep people slim is sometimes jokingly brought up in conversations, I personally enjoy Black Sea cuisine. I think the sheer variety of dishes created using anchovies alone is worthy of admiration.
As you know, anchovies that grow in the cool waters of the Black Sea are one of the indispensable ingredients of this cuisine. This tiny fish, enjoyed for its big flavor, appears in many forms such as fried anchovies, steamed anchovies, anchovy pilaf, and anchovy fritters. Crispy baked anchovies, with their boneless structure similar to anchovy fritters without filling and their healthier preparation method using the oven, could easily earn a place among these classic recipes.
Black Sea Cuisine and the Role of Anchovies
Black Sea cuisine is known for its use of cornmeal, black cabbage (collard greens), and of course, fish-based recipes. Due to the region’s harsh climate, corn is the most widely grown grain, which is why cornmeal is used in many baked goods, from cornbread to crepes and cakes. Anchovies are one of the cornerstones of the region’s culinary culture. Abundantly caught during the winter months, anchovies are used in almost every kind of dish in the Black Sea region.
Health Benefits of Anchovies
Anchovies are very rich in omega-3 fatty acids. Omega-3s support heart health, improve brain function, and help reduce inflammation. Anchovies are also among the fish with low mercury content, making them a safe source of protein. Rich in B vitamins as well as minerals such as calcium, phosphorus, and selenium, anchovies can help protect bone health and reduce the risk of osteoporosis.
Why Baked Anchovies?
Anchovies are usually prepared by pan-frying. However, baking them reduces the amount of oil used, making the dish lighter and healthier. Baking instead of deep-frying also helps preserve omega-3 fatty acids. With this method, the anchovies become crispy on the outside while remaining tender and juicy on the inside.
Serving Suggestion
Serve the crispy baked anchovies hot. You can enhance their flavor by pairing them with lemon wedges, arugula, and an onion salad. For a more filling meal, you may also serve them with regular or sweet potatoes.

Ingredients
- 1 kg anchovies,
- 1/2 cup cornmeal,
- 1 teaspoon salt,
- 2 tablespoons olive oil.
Preparation
- Clean the anchovies by removing the heads, guts, and bones,
- Sprinkle with salt and mix well,
- Press two anchovies together, coat them in cornmeal, and arrange them on a baking tray lined with parchment paper,
- Spray oil over them using a spray bottle,
- Bake in a preheated oven at 200°C (390°F) until the tops are golden,
- Flip the anchovies and return them to the oven, baking until the other sides are also golden.
