1 Dough 2 Cookies
The basis of these pistachio orange and hazelnut chocolate cookies are shortbread cookies from Scottish cuisine. Even though they are Scottish cookies, they are known and made not only in Scotland but throughout the United Kingdom. They consist only of butter, sugar and flour, and do not contain some ingredients found in almost all cookies, such as eggs or baking powder.
They are very similar to our flour cookies in terms of consistency and taste. Although they are originally made simply like Turkish shortbread cookies, it is also possible to make them with different ingredients and different flavors, as I did. Since I am not a big fan of plain cookies, I wanted to share two different types of cookie recipes with the same dough to show you different ways to flavor cookies while I have the opportunity. But if you want to make the original, simple version, you can make it simply by using only flour, powdered sugar and butter, without adding orange peel, pistachios, chocolate and hazelnuts, and you can shape it and cook it by slicing in the same way.
Shortbread cookies are cookies made with very few ingredients. Therefore, there is little that can determine its flavor. Sugar and flour are not ingredients that contribute to flavor. In this case, only one ingredient remains, namely butter. This means that the taste and smell of your cookies depend on the butter you use. When you use a butter with a very strong smell and overpowering flavor, you will get the same smell and taste from the cookies. This also applies if you use margarine instead of butter. In short, in this recipe you harvest what plant.
It is also possible to flavor your cookies in different ways than I did. With the same recipe, you can make cookies with cocoa powder (provided that you add the flour gradually as you always do and by checking the consistency of the dough), cinnamon, almonds, dried fruits, vanilla, mastic, in short, any ingredient you can think of.

1 Dough 2 Cookies with Video
Ingredients
- 200 g of butter at room temperature,
- 1 cup of powdered sugar,
- 3 cups of flour,
If you want to spice it up;
- Peels of 1 orange, chopped in small pieces,
- 1/4 cup of ground pistachios,
- 1/4 cup of ground hazelnuts,
- 50 g of chopped chocolate.
Preparation
- Take the butter and powdered sugar into a mixing bowl and beat with a hand mixer until fluffy,
- Add the flour gradually and knead until you get a dough that does not stick to the hand,
- Divide the dough into two equal parts,
- Add orange peel and pistachios to one half, chocolate and hazelnuts to the other half and knead seperately,
- Wrap the dough separately in plastic wrap and roll,
- Place the dough in the freezer and let it rest until it reaches a consistency that can be easily cut,
- Take it out of the freezer, slice it thinly and place it on a tray lined with baking paper,
- Bake in a preheated oven at 180 degrees until they crack slightly.
