Sour Scallion Soup Recipe

  • 6 sacallions, chopped both whites and greens,
  • 2 tbsp. plain yoghurt,
  • 2 tbsp. lemon juice,
  • 2 tbsp. all purpose flour,
  • 6 cups hot water,
  • 1 tbsp. butter,
  • Salt and red pepper flakes to season.


  1. Melt the butter in a skillet,
  2. Add chopped onions and fry 5-6 mins in low heat,
  3. Add water and boil a few minutes,
  4. In a bowl mix yoghurt, flour and lemon juice,
  5. Whisk briskly to prevent lumps,
  6. Take a scoop of boiling soup water and add very very slowly to the yoghurt mixture and whisk briskly at the same time,
  7. Add warmed yoghurt sauce to the soup slowly and mix well,
  8. Cook 5 mins in low heat,
  9. Add salt, mix and remove from heat,
  10. Season with red pepper flakes.
