Pasta Soup with Yoghurt Recipe

Pasta Soup with Yoghurt Recipe

Ingredients:

  • 1 cup short-cut pasta,
  • 2 tablespoons yoghurt,
  • 1 cup boiled corn,
  • 2 tablespoon flour,
  • 2 tablespoons lemon juice,
  • 2-3 tablespoons vegetable oil,
  • Salt,
  • 1/2 tablespoon dried mint,

Preparation:

  1. Boil the pasta in 6 cups of water,
  2. Whisk together the yoghurt, flour and lemon juice in a separate bowl,
  3. Add some of the starchy cooking water of pasta to the yoghurt mixture and stir well,
  4. Add this mixture back into the pasta and stir,
  5. Add the corn and cook for 5 more minutes stirring continuously,
  6. When it thickens, add the salt, stir and finally remove from heat,
  7. In a small saucepan heat the vegetable oil,
  8. Add the dried mint and stir for 1 min, then add this mixture to the soup and stir.
