Pasta Soup with Yoghurt Recipe

Serving : 6 Servings
Ingredients
- 1 cup short-cut pasta,
 - 2 tablespoons yoghurt,
 - 1 cup boiled corn,
 - 2 tablespoon flour,
 - 2 tablespoons lemon juice,
 - 2-3 tablespoons vegetable oil,
 - Salt,
 - 1/2 tablespoon dried mint,
 
Preparation
- Boil the pasta in 6 cups of water,
 - Whisk together the yoghurt, flour and lemon juice in a separate bowl,
 - Add some of the starchy cooking water of pasta to the yoghurt mixture and stir well,
 - Add this mixture back into the pasta and stir,
 - Add the corn and cook for 5 more minutes stirring continuously,
 - When it thickens, add the salt, stir and finally remove from heat,
 - In a small saucepan heat the vegetable oil,
 - Add the dried mint and stir for 1 min, then add this mixture to the soup and stir.
