The most important tip for this recipe is to add the chickpea flour in a controlled manner. Chickpea flour is naturally gluten-free and absorbs more liquid than wheat flour. If the dough becomes too stiff, the cookies may crumble and dry out during baking. For this reason, it’s essential to add the flour gradually and check the consistency each time. The ideal dough should not stick excessively to your hands but should still be easy to shape.

Using curd cheese or white cheese adds a slight moisture and a refreshing tang to the cookies. However, it’s important to pay attention to the saltiness of the cheese. If the cheese you’re using is very salty, you’ll need to reduce the amount of salt in the recipe accordingly.

Mahlep is like a hidden hero that gives these cookies that wonderful aroma as they come out of the oven. Although it’s optional, I strongly recommend using it if you have it at home. If you don’t have mahlep, there’s no need to substitute it with anything; simply omit it.

Another key point is the baking time. Doughs made with chickpea flour tend to dry out faster than those made with regular flour. If you’ve tried a chickpea flour cheese pastry before, you’re probably familiar with the fragility of chickpea flour doughs. For this reason, instead of leaving the cookies in the oven for too long, it’s enough to watch for cracks on the surface and lightly golden edges. Overbaking will unnecessarily dry out the inside of the cookies.

Finally, coating the cookies in poppy seeds is not just a visual detail. Poppy seeds create a lightly crispy texture on the outside and enhance the overall eating experience.

Chickpea flour walnut cookies can be enjoyed at tea time, for breakfast, or as a snack at any time of the day. When eaten warm, the aromas of the cheese and walnuts are more pronounced, so letting them rest for a few minutes after taking them out of the oven and then serving them is ideal.

Ingredients

  • 1 egg,
  • 1/2 cup milk,
  • 1/2 cup vegetable oil,
  • 2 cups chickpea flour,
  • 1/2 cup curd cheese or crumbled low-fat white cheese,
  • 1 handful chopped parsley,
  • 1/2 cup ground walnuts,
  • 1 teaspoon baking powder,
  • 1 teaspoon mahlep (optional),
  • 1 teaspoon salt.

Preparation

  1. Place the egg, milk, oil, mahlep, salt, and baking powder in a bowl and whisk,
  2. Gradually add the chickpea flour and whisk,
  3. Add the walnuts and mix,
  4. Add the parsley and cheese and mix,
  5. Take small portions of the mixture, roll into balls, coat with poppy seeds, and place on a baking tray lined with parchment paper,
  6. Bake in a preheated oven at 180°C until cracked and golden.
