Zucchini Soup Recipe

Ingredients

  • 1 onion,
  • 1 green zucchini,
  • 2 cloves garlic,
  • 1 tablespoon tomato paste,
  • 1 tablespoon flour,
  • 2 teaspoons paprika,
  • 1/4 cup olive oil,
  • 6 cups water,
  • 1 handful minced dill,
  • Black pepper,
  • Salt.

Preparation

  1. Finely chop the onion and sauté in olive oil along with crushed garlic until softened,
  2. Add in the tomato paste and stir for 2 mins,
  3. Add the paprika and flour, then cook stirring constantly for 1-2 more mins,
  4. Peel and grate the zucchini, then add it to the pot,
  5. Stir and put the lid on, then cook for 4 mins,
  6. Add the water and boil until the zucchini is fully softened,
  7. Blend the soup until smooth, then add the dill, black pepper and salt,
  8. Serve with red pepper flakes sautéed in butter.
