Zucchini Soup Recipe
Serving : 6 Servings
Ingredients
- 1 onion,
- 1 green zucchini,
- 2 cloves garlic,
- 1 tablespoon tomato paste,
- 1 tablespoon flour,
- 2 teaspoons paprika,
- 1/4 cup olive oil,
- 6 cups water,
- 1 handful minced dill,
- Black pepper,
- Salt.
Preparation
- Finely chop the onion and sauté in olive oil along with crushed garlic until softened,
- Add in the tomato paste and stir for 2 mins,
- Add the paprika and flour, then cook stirring constantly for 1-2 more mins,
- Peel and grate the zucchini, then add it to the pot,
- Stir and put the lid on, then cook for 4 mins,
- Add the water and boil until the zucchini is fully softened,
- Blend the soup until smooth, then add the dill, black pepper and salt,
- Serve with red pepper flakes sautéed in butter.
