Stuffed Bulghur Kofta With Yoghurt Sauce

 

 

Serving : 15 pieces

Ingredients

For the outer crust;

  • 1/2 cup wheat bulgur,
  • 1/2 cup semolina,
  • 1/2 cup flour,
  • 1,5 cups water,
  • Salt.

For the filling;

  • 200 gr. ground beef / lamb,
  • 1 onion,
  • 2 tbsps tomato paste,
  • 2/3 cup olive oil,
  • Salt,
  • Cumin,
  • Red pepper flakes,
  • Black pepper.

And also;

  • 1,5 lt hot water,
  • 2 cups plain yoghurt,
  • 2 garlic cloves, minced.

Preparation

  1. For filling finely mince the onion,
  2. Heat the olive oil in a pan,
  3. Sauté the onion until soft,
  4. Add the ground meat and cook until it turns brown,
  5. Add tomato paste and saute for 2-3 mins,
  6. Add salt and spices and remove from heat,
  7. In a separate pan, add the bulgur, semolina and water,
  8. Cook on low heat until all the water is absorbed,
  9. On a large tray, mix the bulgur mixture with flour and knead well for a few minutes with your hands or until everything is well combined,
  10. Grease your hands with oil and pull clementine size pieces from the mixture, then form them into smooth balls,
  11. Form an indent in the centre of each ball ensuring that the crust is as thin as possible,
  12. Fill the indent with the meat mixture and mold the crust around the filling,
  13. In a deep pan with high sides, boil 1,5 lt water,
  14. Drop the kibbeh balls in the water,
  15. Firts they will sink in the bottom, cook until they start to flout on water,
  16. Take koftas out of water to serving plate,
  17. In a seperate bowl combine yoghurt and minced garlic and pour on top of koftas.
