Stuffed Bulghur Kofta With Yoghurt Sauce

Ingredients
For the outer crust;
- 1/2 cup wheat bulgur,
- 1/2 cup semolina,
- 1/2 cup flour,
- 1,5 cups water,
- Salt.
For the filling;
- 200 gr. ground beef / lamb,
- 1 onion,
- 2 tbsps tomato paste,
- 2/3 cup olive oil,
- Salt,
- Cumin,
- Red pepper flakes,
- Black pepper.
And also;
- 1,5 lt hot water,
- 2 cups plain yoghurt,
- 2 garlic cloves, minced.
Preparation
- For filling finely mince the onion,
- Heat the olive oil in a pan,
- Sauté the onion until soft,
- Add the ground meat and cook until it turns brown,
- Add tomato paste and saute for 2-3 mins,
- Add salt and spices and remove from heat,
- In a separate pan, add the bulgur, semolina and water,
- Cook on low heat until all the water is absorbed,
- On a large tray, mix the bulgur mixture with flour and knead well for a few minutes with your hands or until everything is well combined,
- Grease your hands with oil and pull clementine size pieces from the mixture, then form them into smooth balls,
- Form an indent in the centre of each ball ensuring that the crust is as thin as possible,
- Fill the indent with the meat mixture and mold the crust around the filling,
- In a deep pan with high sides, boil 1,5 lt water,
- Drop the kibbeh balls in the water,
- Firts they will sink in the bottom, cook until they start to flout on water,
- Take koftas out of water to serving plate,
- In a seperate bowl combine yoghurt and minced garlic and pour on top of koftas.
